Pumpkin Pop-Tarts with Cinnamon Icing

Full Recipe for Pumpkin Pop-Tarts with Cinnamon Icing
Ingredients
- For the Pumpkin Pop-Tarts:
- 1 package (2 sheets) thawed puff pastry (379 g package)
- 1 cup pumpkin puree (canned or fresh)
- ½ cup brown sugar
- ½ tsp ground cinnamon
- ½ tsp pumpkin pie spice
- ¼ tsp ground cloves
- ¼ tsp nutmeg
- ¼ tsp salt
- 1 egg whisked
- For the Cinnamon Icing:
- 1 cup powdered sugar
- 1/2 tsp cinnamon
- 1 1/2 tbsp cream or milk
- 1/2 tsp pure vanilla extract
Directions:
- Preheat oven to 350 F.
- On a lightly floured surface, roll out the sheets of puff pastry to make two large 12×12-inch squares. Cut each square in half horizontally. Then cut into thirds to create 6 even rectangles for each square. You should end up with a total of 12 rectangles
- To make the filling, stir together the pumpkin, brown sugar, and all the spices until well combined.
- Carefully scoop the pop-tart filling onto 6 of the rectangles, leaving about a 1/2 inch border around the edge. Use about 1-2 tbsp of filling for each pop-tart.
- Brush the egg wash along the border of the pop-tarts and place the remaining rectangles on top, using your finger to press along the edges to create a seal.
- Use a fork to poke a few holes on top to allow ventilation while baking and use the fork to crimp along the edges of each pop-tart.
- Brush the remaining egg wash across the top of each pop-tart.
- Place on a baking tray lined with parchment and bake for about 25-30 minutes or until golden brown.
- While the pop-tarts cool, prepare the icing by combining the powdered sugar, cinnamon, cream, and vanilla in a small mixing bowl.
- Drizzle the icing across the top of the pop-tarts, top with sprinkles and enjoy!
